It’s cold, time for a hearty dish

A Simple Ratatouille
1 medium size egg plant
3-4 medium size zucchini
1 medium onion
1 medium bell pepper
1 10 oz. can diced tomatoes
1 clove garlic, minced, or more if you really like garlic
1 tsp sugar, or less
salt to taste

Remove ends from egg plant and zucchini. Cut egg plant into 1″ chunks. Cut zucchini into crosswise slices about 1/2″ wide. Chop onion into small pieces. Remove seeds from bell pepper and cut into approx. 1″ pieces. No need to be precise on these sizes. They should be bite sized. Place vegetables into large pot, add tomatoes, garlic and salt. Cover and cook on low heat for about a couple of hours, or longer, until veggies are done, stirring frequently. Taste occasionally and adjust seasoning. This should cook just until the vegetables are tender. Serve with warm bread, and be prepared for second helpings.

About the sugar: My father was a chef and taught me to add a small amount of sugar whenever I cooked with tomatoes. It cuts the acidity and enhances the flavor.
